Crazy Easy Dinner: Zoodles Marinara & Turkey Meatballs
This is so easy and fast– literally the whole thing takes about 10 minutes. It’s nothing groundbreaking, but it’s good if you’re trying to go low carb or eat extra healthy leading up to the holidays, as I am. I made Stuffed Pepper Casserole for everyone else tonight, which isn’t really unhealthy, but I wanted something filling and healthy.
The volume of noodles is awesome because it makes you feel like you’re eating a lot, when really the zoodles are about 60 calories total (much more realistic than these awful ones). After I spriralized the zucchini, I used some kitchen scissors to cut the zoodles a few times. If you don’t do that, the strands will be insanely long and harder to twirl, which is part of the fun, right?
I use store bought turkey mini meatballs (I like the brand Farmrich). I had 7, which has 210 calories, 11 grams of fat and 18 grams of protein. I use jarred marinara, too, because it’s easy. I can’t even call this a recipe, but I was super surprised at how good it turned out! I also cooked and photographed it on my iPhone at night, so the picture quality isn’t great. Oh well, this will be a new go-to quick and healthy “pasta” dinner.
All in all, I’d estimate the meal at 350 calories. Not bad, and it’s super filling!

2 raw zucchinis, spiralized on the spaghetti setting
1/2 cup marinara sauce
1 teaspoon garlic powder
1/2 teaspoon salt
crushed red pepper, to taste
7 frozen mini turkey meatballs, heated in the microwave
- Preheat a large skillet over medium heat. Add the zucchini and toss with tongs for about 3 minutes. Add the marinara sauce, garlic powder, salt, and crushed red pepper, and toss for another minute until the sauce is heated through.
- Add the meatballs. Add a tad more marinara if it looks too dry.
- Serve immediately.
