Mediterranean Turkey Meatloaf

This meatloaf is inspired by one I used to make by Giada.  It’s lighter and much more flavorful than traditional meatloaf (although I love that too).  No matter the flavors in a meatloaf, it somehow always feels like comfort food.  I like to serve this meatloaf with a combination of roasted baby red potatoes and broccoli or green beans.  You can roast them together while the meatloaf rests.

40 ounces 93% lean ground turkey

1 ¼ cup seasoned breadcrumbs

2/3 chopped sundried tomatoes (the kind packed in oil)2

1 cup water

3 eggs, lightly beaten

8 ounces crumbled feta cheese

Zest of one lemon

2 tablespoons dried parsley

1 tablespoon onion powder

1 teaspoon crushed red pepper

1 teaspoon salt

1 teaspoon pepper



  1. Preheat your oven to 375 degrees Fahrenheit.
  2. Add all ingredients to a large bowl. Use your hands to gently fold everything together until well combined.  Do not over mix or pack it too tightly.
  3. Divide the meat mixture in half, and form 2 meatloaves on a half sized sheet pan.
  4. Bake for 65-75 minutes.
  5. Remove from the oven, and allow meatloaves to rest for at least 15 minutes before serving.
