10 Unusual Christmas Cookie Recipes To Try
If you’ve been following along, you know that desserts are not my strong suit and that I’ve only started doing a lot of desserts this past year or 2. Christmas time is always a fun time to experiment with cookies because it’s festive, and you can give your homemade treats to your friends and neighbors. I love classic recipes, but I also have fun doing stuff a little unusual. Here are some of my own favorite cookie recipes. But I also thought it would be fun to share a few other different ones with you. I mean chocolate chip cookies are always a hit, but why not make some Ricotta Cookies with Vanilla Bean Glaze or Goat Cheese Sugar Cookies?
- Katrina’s Kitchen: Grinch Cookies. These Grinch cookies are something kids would flip over and who doesn’t love a classic vanilla cookie?
- Love And Olive Oil: Goat Cheese Sugar Cookies. These may sound a little strange, but anyone who likes goat cheese knows it has a similar flavor to cream cheese. Goat cheese is tart and creamy, and it adds some interest to the humble sugar cookie. Use Christmas sprinkles to make it extra festive.
- Running to the Kitchen: Spicy Rosemary and Chocolate Chip Cookies. You may remember my White Chocolate Rosemary Cookie Bars. These cookies take it a little further with cayenne pepper. These may be “adults only” cookies, but that’s okay with me.
- Ina Garten: Ultimate Ginger Cookie. I have wanted to make these forever. These are chewy ginger cookies (as opposed to crunchy ginger snaps), and they have chunks of crystallized (aka candied) ginger inside. I finally found crystallized ginger in the store, and this year, I’m going to go for it.
- The Daring Gourmet: White Chocolate Cranberry Pistachio Cookies. We put lots of nuts in cookies, but usually almonds or pecans. Pistachios are one of my favorite nuts anyway, and when you combine it with cranberries and white chocolate, they’re just perfect for Christmas.
- How Sweet Eats: Salted Dark Chocolate Truffle Cookies. I only recently got interested in the salted chocolate/peanut butter/caramel thing. Though I’ve always liked chocolate covered pretzels, so I don’t know why it took me so long to get on board with this. It’s incredible how salt complements the dark chocolate so perfectly.
- Lovely Little Kitchen: Soft Ricotta Cookies with Vanilla Bean Glaze. I’ve had ricotta cheesecake before, but never thought of putting it in cookies. For these, make sure you use vanilla beans, not just substituting vanilla extract. The beans have such a unique flavor, and it makes these extra special.
- Sally’s Baking Addiction: Saltine Toffee. This is a shortcut way to make toffee, and why not? Especially if you’re making tons of cookies for a bake sale or to give away, you may as well make it a little easier on yourself.
- Smitten Kitchen: Gingerbread Biscotti. Biscotti literally means “twice baked.” Homemade biscotti is so much different from the pre-made kind you can get at the store. Not to mention, you can make unique flavors like this gingerbread, and it will go nicely with a cup of hot coffee.
- Shugary Sweets: Eggnog Cheesecake Bars. I don’t like eggnog, but I do like eggnog-flavored things. I’m the same way about apples: I love apple pie, cider, sauce, but I don’t like plain apples. Technically these aren’t cookies, but I always classify cookies and bars together because they’re handheld, bite-sized treats.
