Roasting vegetables is one of the best ways to make them flavorful.  Simple is best.  You can really do this recipe with any similar vegetable.  I use the same one for asparagus, broccoli, and Brussels sprouts.  This goes perfectly with Classic Chicken Parmesan for a Sunday dinner.


Total Time:  Less than 30 minutes

Serves: 4

Difficulty Level:  Easy



2 cups of fresh green beans, trimmed

Olive oil

Salt and pepper

Juice of one lemon


  1. Preheat oven to 425 degrees.  Drizzle a sheet pan with olive oil spray, and spread out the green beans in a single layer.  Toss the beans with the olive oi, and sprinkle with plenty of salt and pepper.
  2. Cook for 15 minutes, or until the green beans have started to brown and smell toasty.
  3. Remove from the oven, squeeze lots of lemon juice over the green beans. Serve immediately.
