Lemony Roasted Green Beans
Roasting vegetables is one of the best ways to make them flavorful. Simple is best. You can really do this recipe with any similar vegetable. I use the same one for asparagus, broccoli, and Brussels sprouts. This goes perfectly with Classic Chicken Parmesan for a Sunday dinner.

2 cups of fresh green beans, trimmed
Salt and pepper
Juice of one lemon
- Preheat oven to 425 degrees. Drizzle a sheet pan with olive oil spray, and spread out the green beans in a single layer. Toss the beans with the olive oi, and sprinkle with plenty of salt and pepper.
- Cook for 15 minutes, or until the green beans have started to brown and smell toasty.
- Remove from the oven, squeeze lots of lemon juice over the green beans. Serve immediately.
